I knew that it was going to be a VERY cold week, so I wanted to make a hearty soup!  I was pleasantly surprised with this delicous soup!

Ingredients
  • 1 t coconut oil
  • 1 small butternut squash peeled & cubed
  • 2 small yellow onions diced
  • 1½ C red lentils
  • 8 C vegetable stock
  • can diced tomatoes
  • 4 C kale chopped
  • 1 T coriander
  • 1 T garam masala
  • pinch salt & pepper
Instructions
  1. sautee onions & squash in stock pot with coconut oil for 10 minutes
  2. add vegetable stock & bring to a boil
  3. add the remaining ingredients
  4. simmer covered for 1 hour
