I hope everyone had a great weekend. It’s hard to believe that it’s already Monday! Yesterday I actually ran outside! I’ve been running on my treadmill in my basement because it’s too darn cold (& dark) in the a.m. now. It is definitely NOT my routine to run later in the day. However, that’s how it worked out for me yesterday & I was so glad that it did! If I had a chance to run in the a.m., I would have gone to the basement, but I didn’t get a chance to run until 12:00, so outside it was for me! It was a little chilly to start, but I warmed up after a mile or so. I also forget that it takes me a bit to transition from treadmill to outside. I ran 6 miles, but must say that the first 3 were a bit difficult on my shins, as they are now used to the extra cushion they’ve been getting from my treadmill.
I must say that as much as I’ve been loving watching shows on an IPad while I run, I definitely get a lot more out of running outside!
That being said, I will continue to run on my treadmill, but focus on cross training. My friend gave me her Focus T25 DVD’s to try & that I will tomorrow! I’m really psyched to try them. Shaun T is the trainer & I think he’s the bomb! I’ve done Insanity with him & love those DVD’s. I’ve also done P90X, definitely didn’t like that series as much as Insanity. I’ve also done the Rev Abs & Turbo Fire. They’re all Beachbody dvd’s & by far, Insanity is my favorite. Looking forward to trying yet another one tomorrow!
Well, today is Monday & I’ve got a great quick recipe for you. I made a double batch so we’d all have it for lunches this week.
- 2 cups cooked quinoa
- 1 can black cooked beans beans, drained – use any kind of bean
- 4 tomatoes, chopped
- 1 small red onion, chopped
- 1 red bell pepper, chopped
- 2 Tablespoons chili powder
- 4 teaspoons Bragg Liquid Aminos
- Place all other ingredients in a large bowl and mix together.
- I like this on top of arugula or any greens.
